Hello everyone!
Yes it’s finally July and although the weather is still making up it’s mind, we have decided it’s time for some summer rolls! Now these are super quick and great finger food if you’ve got loads of guests over and want to serve something new. I didn’t have enough time to make them look amazing as I was in a rush but you can really let your creativity go with this dish!
It’s super simple to make… just choose your favourite veggies (I like to choose ones which are crunchy as I feel that works well in this dish but you can choose whichever ones you like!). Cut these finely into strips.

Now soak your rice paper wraps (I get mine from Wholefoods) in hot water until they go soft. Fill with veggies, lettuce and peanuts (again for crunch) and wrap in all sides to make sure nothing spills out.

Once you’ve done this serve it up with my favourite satay sauce (also used in the tofu satay recipe):
Satay sauce
2 tbsp seasame oil
1/4 cup chunky peanut butter
1/2 tbsp chopped fresh ginger
Juice of 1 lime
2 tbsp soy sauce
2 tsp agave nectar
Water as needed to thin out
I also decided to try out a new recipe from Livia’s kitchen– her recipes are great and have consistently turned out really well. Plus she doesn’t use refined sugar so we like that!
