Bank holiday weekend is here (!) and although the sun may not be shining as it has been this week don’t forget to get outdoors and enjoy our amazing/ typical British summer. There are so many events happening this weekend and although I haven’t been able to get tickets for anything this year I will be enjoying the long weekend with my husband and enjoying the outdoors (even in the rain! That’s why we have wellies!)
Now onto the blog post, “savoury scones” I hear you say? Well I said exactly the same thing when my husband suggested them when I told him I wanted to make scones. But hey we felt adventurous so we gave it a go! And boy oh boy were we happy with the results. They taste like little balls of pizza! So enough of me, here’s the recipe… Enjoy!

Ingredients
2 cups self raising flour
1/2 tsp baking powder
1/4 tsp salt
1 tsp dried mixed herbs
1/4 cup nutritional yeast
1/4 cup coconut oil
4 cherry tomatoes (cut into quarters)
3 sundried tomatoes (sliced)
1/3 cup sliced olives
1/2 cup almond milk
Method
Preheat the oven to 180 degrees.
Mix dry ingredients together (flour, salt, baking powder,herbs, nutritional yeast). Mix in the coconut oil to make small crumbs (mix with hands). Then add in the cut tomatoes and olives until coated in flour.
Finally add in the almond milk (or milk of your choice) slowly until it forms a soft dough. Roll into balls and put it onto a greased baking tray (alternatively you can roll it out and cut out circles). Coat the balls lightly with milk using a brush and put into the oven for 10-15min (check with a knife to see if they’re cooked, the scones should be light brown and slightly hard on the outside).
Enjoy warm. Can be sorted overnight in an airtight container but warm slightly before eating.
