Ok so it’s been ages since I’ve posted anything on here but haven’t been able to get into the kitchen much recently… But hopefully the recipes will be coming back!
To kick start this, I’ve started with a favourite of mine. I went through a month of having this every other day. It’s a perfect meal to make in a hurry and it’s so comforting too! Plus who said vegans can’t have Mac & Cheese?! Follow the recipe below for your own comfort bowl.
Ingredients for sauce
1 potato / 1 carrot chopped and cooked until soft
1/3 cup cashews soaked in water
1 tbsp tahini
1/2 tsp dijon mustard
1 tsp salt
1/3 cup nutritional yeast
Black pepper and paprika to taste
Pasta of your choice
1 broccoli cut and steamed
Cook the pasta of your choice and drain. While this is happening boil the potato/carrot until their soft. Then mix the boiled veg to the soaked cashews in a blender. Add all other sauce ingredients and a splash of water. Blend until you get a smooth thick liquid (you may need to keep adding some water).
Pour the sauce over the pasta and broccoli and mix well. Serve hot and enjoy 🙂
