Happy new year! Hope you’ve all had a beautiful start to the year and started feeling strong and powerful and ready for the magical year ahead!
Now I know I haven’t been posting as many recipes at the end of last year but things got a little busy and I was still trying to find my feet but here I am and I’m back to give you all some amazing recipes. 2017 is going to be a challenging and amazing year! A year for new experiences and adventures.
But now I go back to the recipes and this one’s a good one! This is actually a family recipe and a great alternative to fried samosa’s. I hope you enjoy it! You have been warned- they’re so moorish you may eat the entire batch!
Ingredients
3 large potatoes
2 medium carrots
2 cups peas
2 tbsp oil
2 tbsp cumin seeds
Salt to taste
Freshly ground ginger and chilly paste to taste
1/2 tsp cinnamon powder
2 puff pastry rolled
1/2 lemon juiced
Method
- Cut the vegetables into small pieces
- Put the oil into a pan and once hot add the cumin seeds (the cumin seeds will start to pop when it’s ready)
- Add the vegetables and salt
- Add chilly and ginger paste to taste
- Let it cook until it’s 3/4 done (stir to avoid burning and do not cover whilst its cooking)
- Let the vegetables cool
- Add lemon and cinnamon powder and mix well
- Spread out the puff pastry
- Lay a thin layer of vegetables over the puff pasty and roll it like a swiss roll. Stick the puff pastry with a little bit of water
- Freeze the rolls until they’re needed
- Cut into 3/4 inch pieces and bake at 175 degrees C until golden brown
- Serve warm and enjoy
